A Recipe from a Day in The Country


Thai Watermelon Soup
We never would have guessed that these combinations of flavors would taste so good! The main 3 ingredients for this chilled soup come directly from the farm...

Base:
1 Red Seeded Watermelon (Cut into chunks and Puree)
5 Heirloom Tomatoes (Chopped & Pureed)
3 Small green Chili Peppers finely chopped
1/4 Cup Fresh Lime Juice
5 Tsp finely Chopped Cilantro

Aromatics:
2 Stalks Lemon Grass Chopped
2 Tsp Fresh Ginger finely chopped
3 Tsp Chopped Garlic
5 Tsp finely chopped Shallots
Salt to taste
1 tsp Olive Oil
Cut Watermelon into Chunks and Puree in a blender (Reserve 1 1/2 cup).
In a Saucepan sauté the Lemon Grass, Ginger, Garlic & Shallots until tender.
Add the reserved Puree to the aromatics and cook for 5 minutes. Cool.
Blend the cooked mixture with the fresh Watermelon, Tomatoes, Chili Peppers, Cilantro & Lime Juice.
Garnish with extra Cilantro and Fresh Lime Stir and Enjoy!
